Give Me Back My Filet o’ Fish

Lime-Scented Orange Roughy from Cooking Light. TJ’s was out of orange roughy, so I went with tilapia. White fishes are usually interchangeable, right?
Baby spinach and carrots sauteed in a little olive oil and garlic – put them on your sheet of foil.
Add your filet o’ fish and top with your tasty liquid mixture.
Fold your foil into a packet and bake for 20 minutes at 400* and out comes that tasty little dinner. Dump your sauce on top and you’re ready to go.
In other eating activities,
I created one of the most delicious desserts ever:
Frozen berries, a scoop and a half of vanilla bean coconut ice “cream” and a drizzle of TJ’s Midnight Moo organic chocolate syrup.
Tonight’s dinner was a turkey burger, whole wheat bun, cheetah sweet potatoes and a salad of romaine, spinach, grape tomatoes carrot and red onion.
Snuggling up with my snuggie and my hubbie and watching Jim and Pam’s baby come tonight…who’s excited?
Three cheers for Friday tomorrow! I got some great news at work today, so I’m going into my weekend a happy camper. I’m taking a day off from working out tonight since I did two speedy runs in a row. So tomorrow is a run and yoga moves to Saturday. Now that I’ve explained that to you… here is some bloggy house-keeping.
